Tokyo Ghoul

History
Formerly a human studying Japanese Literature at Kamii University and living a normal life, everything was soon changed after he had Rize's organs transplanted into him and became a one-eyed ghoul. After joining a group called Anteiku as a part-time waiter, he learns how to live as a ghoul, despite his on-going struggle with the morality of consuming human flesh.

After being captured by Aogiri Tree, he was able to accept his ghoul side. His goal is to protecting the ones precious to him and destroying people who threaten the place he belongs to.
Personality
Kaneki began as a shy, reserved person with few friends. He was gentle and generally soft spoken and optimistic. He lacked assertiveness and it led to bullying and being taken advantage of, but for the most part he tried to remain altruistic. Beneath that altruism was a deep fear of being alone. His desire to protect others to avoid that loneliness led to him shouldering complete responsibility for things that he probably should have gotten help with. Though this might seem altruistic, Kaneki eventually has to confront that his motives are selfish: he doesn't want to be alone. This kind of thinking potentially has the opposite effect of putting his friends in danger, as he refuses to rely on anyone else for help. After being turned into a half-ghoul, he clung to his human side and had difficulty feeding at all until he found a way to do so that would assuage his guilt. Kaneki also had a habit of idealizing his relationships with other people, particularly his mother. It took him a long time (and his mind nearly breaking) to accept that his mother was not only weak but also abusive.

Despite witnessing atrocities committed by the CCG, an organization built to investigate ghoul activity and stop ghouls that posed a threat to human society, Kaneki believes that there can be some kind of middle ground, some way of co-existing if only the violence between the CCG and ghouls could be stopped. Twice, he refuses to kill Kotarou Amon, an investigator whose mentor was murdered by Kaneki's friends. In the first instance, Kaneki allows himself to be beaten and thrown around by Amon, refusing to truly fight back; in the second instance, their battle is far more heated but Kaneki refuses to resort to killing Amon.

After enduring intense torture, Kaneki's personality shifts. He lets go of his mother's ideology that being hurt was better than hurting others and instead embraces being ruthless, cruel, and brutal in order to protect his friends and place of belonging. Despite this, Kaneki generally maintains complete composure, regardless of how desperate a situation might be. He no longer fears or holds back his ghoul side, instead embracing it and becoming more violent during his battles. He is still capable of showing his gentle side to people he cares about, but he will instantly become ruthless at the hint of a threat.
Ghoul
Ghouls are a carnivorous and cannibalistic humanoid species that are only able to feed on the flesh of humans and other ghouls. They are relatively similar to humans otherwise: they normally display the same attributes, the same physical appearance and intelligence as a human, with the main exception being their inner biology, mentality, and diet.

A ghoul can only feed on humans and other ghouls. They are unable to digest any other type of food due to a particular enzyme their bodies produce. The structure of their tongues is also different from humans', making other foods taste disgusting and uncomfortable. When forced or forcing themselves to digest such food, their physical condition will deteriorate.
Ghoul: must consume human flesh to survive
Tortured: he's endured prolonged torture and this may come up
